Their meticulous fermentation and drying bring out a medium body with layered flavors of mulled blueberry, blood orange, and plum.

Origin Story

Gaitania, Tolima, Colombia

Colombia Gaitania comes from ACEDGA, a cooperative founded in 2006 by a group of coffee farmers in the Gaitania district of Tolima who wanted better opportunities to market their coffee without sacrificing quality. Today ACEDGA has 72 members, including 17 women producers, farming across roughly 300 hectares of certified organic land. Their plots sit between 1,550 and 2,100 meters above sea level in southern Tolima, where the elevation and cool nights slow the ripening process and deepen the complexity of the cherry. Harvest runs from April to January each year, and every cherry in this lot is handpicked at peak ripeness. The 17 women of ACEDGA are the ones who carry this coffee across the finish line. They carefully hand-process the cherries using standardized wet milling and extended fermentations of over 48 hours, techniques they have refined to draw out the fruity, delicate character this lot is known for. The result is a cup that reflects their craft, their care, and the land they farm. Grown using organic practices and certified at origin.
